THOUGHTS .......

I made a start on my new habits today. I listened to Gateway Bible for a while. Listening is easier than reading.

I made small step toward getting involved with the Garden Circle, (Community), I'm not sure if they meet this month. Most groups take January off.

I'm here, blogging.

Today I tried a couple of new to me recipes. I bought some lamb shoulder chops and wanted to do more than just panfry because they can be a bit chewy. I made a marinade with lemon juice, and zest, olive oil, red wine and freshly chopped mint. The chops were laid in a shallow dish and turned every 30 minutes or so for 2 or 3 hours. I was very happy with the result. They'd be nice thrown on the BBQ but it was a bit windy outside. I served them with a different kind of Guacamole too. I squeezed half a lime into a bowl, added pepper and salt, finely chopped garlic, a chopped avocado, a teaspoon or so of mint sauce and coconut cream and mashed it all up to make a thick spooning sauce. It made quite a bland sauce but went well with the chops and it made a decent dressing for the lettuce and mixed veggie salad. I don't know whether I'd bother with the mint guacamole again but the marinade was worth it.

Considering I have this annoying cold I was quite pleased with myself for achieving anything today. 10 minutes on the cross-trainer, washed and roughly styled my hair and prepared our evening meal. There are many days in the past when I would have done Zero of anythin

Breakfast:- Coffee and cream

Lunch: Omelet with peanut butter, seemed like an odd combination but that's what I felt like and went down well.

Dinner:- Lamb chop, potato, salad, mint guacamole

Snacks:- Almonds, strawberry, lozenges and vitamin C, chocolate

Drinks:- Water x 4
Flavoured Tea Infusions x 0
Cream coffee x 2
Diet Lemon, lime and bitters

Daily Goal:- 1.5lt or 5 - 6 cups large *no*

Exercise:- Walk or Cross-trainer *yes*

10 minutes cross-trainer = 1.75 km Pathetic but I am trying to nurse my knee along into full recovery and do not want to put any strain on it. It was really hard to discipline myself to 10 minutes at a time when I felt as though I could go on forever even with my nasty cold.

  2. I don't normally eat lamb, but those chops REALLY sound AMAZING!!!! :-) Hope your cold is better soon! You are an amazing lady with your activity level! Always on the go! Happy New Year!
